The Details on Fukuihara Clairet:
A blend of white and red grapes.

Made from grapes harvested in Fukuihara, Takayama Village. (Central Japan)
Grapes: Chardonnay, Muscat Bailey, Pinot Gris, Zweigeltrebe, Pinot Noir
The Chardonnay and Pinot Gris fermented separately in a tank and then blended
Muscat Bailey A, Zweigeltrebe, and Pinot Noir Cuvée aged in barrels for 8 months
Aromas of ripe strawberries, blackcurrants,
acerola (tart and citrus), cherries, and violets. The Chardonnay and Pinot Gris offer slight grapefruit, quince, and white peach, with firm mineral nuances. The finish has a slight tannic edge.
Paired best with delicate dishes consisting of vegetables and fish.

Petit Manseng
The White Wine:
The Cantata di Montagna wine is made from Petit Manseng, a wine grape originating in South West France.
A warm summer provided fully ripe grapes fermented naturally with wild yeast. The Cantata di Montagna is a white wine with rich acidity and a long, lingering finish. It’s a great, easy-sipper.

The Red Wine
From The Wine Makers:
The “Here Comes the Sun” originates in the southwest of France. There, they grow a little-known red wine grape variety called Tannat. We first became interested in Tannat when looking at climatological data for French wine-producing regions. In South West France, we found weather patterns similar to those of Japan, with high summer rainfall and temperatures. We thought the grape varieties indigenous to the region might suit the Japanese climate, so we imported some of these vines, including some Tannat.
It took several years to increase the number of Tannat vines to a point where we could plant several vineyards, but with the results in hand, we are certainly glad that we took the time. The “Here Comes the Sun” is a powerful, deeply colored, highly structured wine in a classic style. Tannat (from mountain vineyards in Yamagata and Nagano) provides structure and depth, while Cabernet Sauvignon from Yamagata and Barbera from Gunma add a plush, smooth character.
We recommend this wine with beef steak, smoked game, and other grilled meat dishes.

Hitachixo Nest Sweet Stout
- From the Critics Black color, large to moderate tan head. Aroma of lactose and moderately roasted malts, hints of chocolate. Smooth mouthfeel. The flavor is nice and smooth, with mild roasted notes, some lactose (but not too sweet), hints of mild coffee and chocolate. Pleasant and easy to drink.
